  1. 8 cups chopped fresh or frozen rhubarb

  2. 4 cups chopped onion

  3. 2 cups white vinegar

  4. 2-1/3 cups packed brown sugar

  5. 1 teaspoon ground cinnamon

  6. 1 teaspoon ground allspice

  7. 1/2 teaspoon ground cloves

  8. 1 teaspoon salt

  9. 1/2 teaspoon pepper

  1. In a large saucepan or Dutch oven, combine all ingredients. Bring to a boil. Reduce heat and simmer for 1 hour or until thickened, stirring occasionally. Cool. Refrigerate in covered containers. Yield: about 7 cups.
