  1. Grilled Caesar Salad

  2. 3 to 5 servings

  3. 2 garlic cloves

  4. 3 tablespoons fresh lemon juice

  5. 1 tablespoons Dijon mustard

  6. 3/4 cup, plus

  7. 3 tablespoons olive oil

  8. 1/2 cup freshly grated Parmesan, plus shaved Parmesan for serving

  9. 3 heads romaine hearts, sliced lengthwise in

  10. Salt and freshly ground black pepper

  11. Preheat grill to medium heat.

  12. In a blender, combine the garlic, lemon juice and Dijon mustard.

  13. Drizzle in 3/4 cup olive oil to emulsify. Add the Parmesan and pulse.

  14. Gently toss the hearts of romaine in remaining olive oil and season

  15. with salt and pepper. Grill for 2 minutes, until grill marks appear

  16. and the romaine becomes wilted.

  17. Remove the lettuce to a cutting board and cut into 2-inch wide

  18. strips. Place in a bowl and drizzle with the dressing. Toss to coat

  19. and serve warm. Garnish with the shaved Parmesan.
