  1. 2 Tbsp stick butter

  2. 3 Tbsp Dijon mustard

  3. 1/2 cup maple syrup

  4. 5 medium sweet potatoes (about 3 lb), peeled, halved lengthwise, cut in 3/4-in. wedges, wedges cut in half

  5. 1/4 tsp pepper

  1. Position racks to divide oven in thirds. Heat to 350°F. Have a medium roasting pan ready.

  2. Melt butter in a small bowl in microwave. Stir in mustard, then syrup.

  3. Put potatoes in roasting pan. Toss with syrup mixture and pepper; spread evenly.

  4. Roast on lower oven rack 1 hour, stirring occasionally, until potatoes are tender and glazed.

  5. Planning Tip: Can be roasted up to 2 days ahead. Transfer to ovenproof or microwave-safe serving dish and refrigerate. Reheat in oven or microwave.
