  1. Whisk these dry ingredients together:

  2. 1 cup buckwheat flour

  3. 1/2 cup white rice flour

  4. 1/2 cup sorghum flour

  5. 1/2 cup tapioca starch

  6. 1 teaspoon xanthan gum

  7. 1 teaspoon baking soda

  8. 1 1/2 teaspoons baking powder

  9. 1/2 teaspoon fine sea salt

  10. 1/2 cup plus 2 tablespoons unsweetened cocoa powder

  11. 3/4 cup organic white sugar

  12. 3/4 cup organic light brown sugar

  13. In a separate bowl combine:

  14. cup Spectrum Organic Shortening

  15. 2 tablespoons molasses

  16. 7 to 10 tablespoons chocolate milk, hemp or rice milk, as needed

  17. 1 teaspoon vanilla extract

  18. 1 teaspoon peppermint extract

  19. 2 large organic happy egg s or egg replacer

  20. Add in at the end:

  21. 3/4 cup semi-sweet chocolate chips
