  1. 1 1/4 cups whole wheat pastry flour

  2. 3 tablespoons soy flour, chickpea flour, vital wheat gluten or 3 tablespoons other high-protein flour

  3. 1 tablespoon baking powder

  4. 1 1/2 teaspoons salt

  5. 1 tablespoon coconut oil

  6. 1 teaspoon cinnamon (or more)

  7. 1 cup applesauce

  8. 2 cups almond milk

  1. Combine dry ingredients.

  2. Add wet ingredients and mix well. If your milk is cold, mix your coconut oil in with the dry ingredients first so it doesn't clump up on you.

  3. You can cook them just like this, or let soak overnight to reduce the phytic acid content of the flour.
