  5. For the marinade

  6. Buttermilk to cover the fish

  7. 1 tablespoon ground turmeric

  8. 3 tablespoons freshly grated galangal or ginger juice

  9. 2 tablespoons shrimp paste

  10. To garnish

  11. Fish sauce and shrimp sauce, to taste

  12. Lime juice, to taste

  13. Lettuce, preferably romaine or butterhead

  14. An assortment of herbs, such as Thai basil, mint, and perilla

  15. Roasted peanuts
