  7. 1/2 c Split chickpeas or mong dahl

  8. 1 1/2 c Water

  9. 4 Eggplants, medium

  10. 2 c Water

  11. 1/8 ts Turmeric

  12. 1 c Coconut, fresh and grated

  13. 1/2 ts Cumin seed

  14. 3 Green chilies

  15. 2 tb Vegetable oil

  16. 1 t Mustard seed

  17. 3 Bay leaves

  18. 3 Red chilies

  19. 1 tb Lemon juice

  20. 1 pn Salt

  21. 2 tb Coriander leaves-fresh/chopd

  22. Boil chickpeasd or moong dahl in 1 1/2 cups water with

  23. a pinch of salt and 1/8 ts turmeric until done. Then

  24. mash them well.

  25. Slice the eggplants lengthwise. Boil them in a large

  26. saucepan filled with 2 cups water, a pinch of salt and 1/8 ts turmeric. When eggplants are tender, add

  27. mashed chickpeas/moong dahl.

  28. Grind the coconut, cumin seed and green chilies

  29. together.

  30. Heat 1 tb of the vegetable oil in a skillet and add

  31. mustard seed, bay leaves and red chilies. When

  32. mustard seeds stop cracking, add this mixture to the

  33. eggplants. Add lemon juice. Stir a few times. Add

  34. salt to taste and sprinkle with coriander leaves. - - - - - - - - - - - - - - - - - -
