  1. 2 cups Whole wheat pastry flour

  2. 1/2 cup White all-purpose flour

  3. 1/2 cup Brown sugar

  4. 2 tsp Baking powder

  5. 1/2 tsp Baking soda

  6. 1/2 tsp Salt

  7. 2 tsp Cinnamon

  8. 1/2 tsp Allspice

  9. 1/4 tsp Nutmeg

  10. 1/4 tsp Cloves

  11. 2 Eggs

  12. 1 cup Milk (soy milk may be used)

  13. 1 tsp Vanilla

  14. 1/2 cup Unsalted butter, at room temp

  15. 1 cup Grated carrots

  16. 1/2 cup Chopped pecans or walnuts

  17. 1/2 cup Golden raisins

  18. 1/2 cup Dried cranberries

  19. 1/2 cup Crushed pineapple with juice

  20. 2 Tbsp Rolled oats

  1. Preheat oven to 375 degrees. In a large mixing bowl, combine flour, baking powder, baking soda, spices, and salt. In a separate bowl whisk together milk, eggs and vanilla. Add egg and milk mixture to dry ingredients along with butter; mix well. Add grated carrots, nuts, cranberries, raisins, and crushed pineapple. Pour into greased bread pan and sprinkle top with oats. Bake for 45 minutes or until a knife comes out clean when inserted in the center.
