  1. 1 c dried cannellini or great

  2. -northern; beans, soaked

  3. 2 tb olive oil

  4. 1 onion; minced

  5. 1 celery stalk; minced

  6. 1 carrot; minced

  7. 1/2 lb smoked ham; diced

  8. 2 garlic cloves; minced

  9. 1 cn crushed tomatoes - (28 oz);

  10. -including liquid

  11. 4 c beef stock

  12. 1 tb minced fresh thyme

  13. 1 (or 1 tspn dried thyme)

  14. 1 bay leaf

  15. 1 freshly-ground black pepper;

  16. - to taste 1 rind from a piece of

  17. -parmesan chees; e

  18. 2/3 c dried small pasta

  19. 1 (such as shells or elbows)

  20. 1 minced fresh basil; for -garnish

  21. 1 freshly-grated parmesan; for - garnish

  1. Drain the beans and set aside.

  2. In a large stockpot heat the oil over moderate heat until hot. Add the onion, celery and carrot and cook, stirring occasionally, for 5 minutes.

  3. Add ham and garlic and cook stirring, 1 minute. Add tomatoes, beans, beef stock, thyme, bay leaf and pepper to taste. Add the Parmesan rind. Bring to a boiland simmer, covered, for 30 minutes.

  4. Transfer 1/2 cup of the beans to a small processor or blender and puree. Return beans to pot and season with salt and pepper to taste.

  5. Bring liquid to a boil and add pasta. Simmer until pasta is tender — about 6 minutes. Garnish with basil and cheese.

  6. This recipe yields 6 servings.
