  2. Title: Chocolate Cherry Cheesecake

  5. 8 1/2 oz Chocolate Wafers; crush fine

  6. 1/2 c Butter; Melted

  7. 12 oz Chocolate chips, semi-sweet

  8. 1 1/2 c Cream, heavy

  9. 16 oz Cheese, cream; Softened

  10. 1/4 c Sugar

  11. 4 lg Eggs

  12. 3/4 c Cherry Flavored Liqueur

  13. 1 ts Vanilla

  14. 1 lb Cherry Pie Filling

  15. 1/2 c Cream, heavy; whipped (opt.)

  16. In large bowl, combine chocolate wafer crumbs and butter. Pat firmly into 9-inch springform pan,

  17. covering bottom and 2 1/2 inches up sides. Chill.

  18. Preheat oven to 325 F. Combine over hot (not boiling)

  19. water, chocolate chips and heavy cream. Stir until

  20. morsels are melted and mixture is smooth. Set aside.

  21. In large bowl, combine cream cheese and sugar, beating

  22. untl creamy. Add eggs, one at a time, beating well

  23. after each addition. Add chocolate mixture, cherry

  24. liqueur, and vanilla, mix until blended. Pour into prepared crust.

  25. 325 F. for 60 minutes. Turn oven off. Let

  26. stand in oven with door ajar 1 hour. Remove, cool

  27. completely. Chill 24 hours. Spread cherry pie filling

  28. over top of cheesecake leaving 1-inch from the edge

  29. uncovered. Decorate edge with whipped cream, if

  30. desired. --
