  1. 200g soft unsalted butter

  2. 70g icing sugar

  3. 10g vanilla sugar (flavoured with real vanilla)

  4. 20g egg yolk (approx. 1)

  5. 225g plain white flour

  1. Mix the room temperature softened butter with the sifted icing sugar and vanilla sugar before adding in the egg yolk.

  2. Add the flour, a little at a time, and be careful not to overwork the mixture.

  3. Divide and weigh the dough into 120g pieces and roll them into logs of 15cm with the help of a little flour. Put them in the freezer at once and leave for 30 minutes.

  4. Brush the length of the dough with gently beaten egg yolk. Then roll the dough in the caster sugar and put them back in the freezer again for 10 minutes.

  5. Preheat the oven togas mark 4, 350 F (180 C).

  6. Divide the rolls of dough into 10 pieces each and set on a baking tray lined with baking paper. Bake for 10 minutes.
