  1. 1 (400g) tin black beans, rinsed and drained

  2. 2 (340g) tins sweetcorn, drained

  3. 8 spring onions, chopped

  4. 2 green chillies, seeded and minced

  5. 1 green pepper, chopped

  6. 1 avocado - peeled, stone removed and diced

  7. 100g (4 oz) jarred roasted red peppers, drained and chopped

  8. 3 tomatoes, seeded and chopped

  9. 1 small bunch fresh coriander, chopped

  10. 1 lime, juiced

  11. 8 tablespoons Italian salad dressing, or homemade vinaigrette
