  1. 1/4 cup 59ml Olive oil

  3. 1/2 cup 55g / 1.9oz Chopped celery

  4. 1/2 cup 55g / 1.9oz Chopped carrots Salt - to taste Crushed red pepper - to taste

  5. 1 tablespoon 15ml Chopped garlic

  6. 2 Chopped peeled seeded tomatoes -

  7. 28 oz ea 2 teaspoons 10ml Dried oregano leaves

  8. 1 Bay leaf

  9. 1 Small can tomato paste

  10. 3 cups 711ml Water

  1. Recipe Instructions In a saucepan, over medium heat, add the oil. Add the onions, celery and carrots. Season with salt and crushed pepper. Cook for 4 to 5 minutes or until the vegetables are soft and clear in color. Add the garlic, tomatoes, oregano, and bay leaf. Season with salt and pepper. Cook for 30 minutes. Whisk the tomato paste and water together. Add to the tomatoes. Bring the liquid to a boil, reduce the heat to medium-low and simmer for 1 hour. Remove from heat and reseason with salt and pepper. This recipe yields about 4 cups.
