  1. Crust

  2. 1 box Pillsbury refrigerated pie crusts, softened as directed on box

  3. Filling

  4. 2 eggs, separated

  5. 1/2 cup firmly packed brown sugar

  6. 3/4 cup peanut butter

  7. 1/4 cup dark corn syrup

  8. 1 can (5 oz; 2/3 cup) evaporated milk or milk

  9. 1 teaspoon vanilla

  1. Heat oven to 350F. Place 1 pie crust in 9-inch glass pie pan as directed on box for One-Crust Filled Pie.

  2. Beategg whites in small bowl until stiff peaks form. Set aside. In largebowl, combine egg yolks and brown sugar; beat until mixture is light incolor and thickened. Add peanut butter and corn syrup; blend well.

  3. Gradually beat in milk and vanilla. Fold egg whites into peanut buttermixture. Spoon into crust-lined pan.

  4. Bake 30 to 35 minutes or until filling is set. Serve warm or at room temperature. Store in refrigerator.

Whipping and folding tells me it's lighter than some versions of peanut butter dessert. Raspberry or your favorite jelly melted and drizzled, with some white chocolate shavings & whipped cream on the side as like the glass of milk you'd drink with it. (Replacing the nuts, chocolate sauce, and ice cream). I think it would be like a grown up version of PB&J that could be enjoyed in groups without it getting stuck on the roof of your mouth, LOL. I've always shy-ed away from dark corn syrup in recipes, recalling it as quite pronounced in flavor, so if there's something else that could do it's job in this recipe like light corn syrup or something entirely different. I'm not sure what it's function is in this pie but I think omitting it might make the pie even lighter and more lending to this light modern PB&J idea.

  9. The previous poster talked about PB&J -- I would NOT add jelly (mainly because I have always HATED the combo of pb&j -- bu tknow many like itl. To each their own. I'm sure its great. But not for me.

  10. I'd probably add some chocolate (chocolate freak that I am) .. maybe chocolate or some Nutella (hazenut choco spread) ... as I find it a good combo w/ peanut butter.

I don't "HATE" pb&j per se, actually like the flavor contrasts, but it can be a bit much sometimes cause it's all so heavy and thick and that's when I go for these alternate peanut butter combos. I'd always thought of Nutella as a peanut butter SUBSTITUTE but thanks for opening my eyes! I'm gonna pick some up on my next trip to the market and add one more mate to my peanut butter obsession, maybe with pretzels or a warm tortilla for a quick snack.

Top with whipped cream and drizzle with chocolate and carmel sauce and garnish with some white, peanut butter and milk mini choco chips.

  15. I also like the idea of using a chocolate-y crust instead of a normal pie crust.

  16. Or! You could put half the peanut butter filling in the crust, bake it for a bit so it sets, and then do a chocolate/Nutella layer, and then the rest of the PB filling and bake, so then it's a layered pie.

  25. Beat egg whites in small bowl until stiff peaks form and set aside.

  26. Beat egg yolks with brown sugar until light in color and thickened.

  27. Gradually add flour; sift in 1 TBSP at a time.

  28. Add peanut butter and corn syrup; blend well.

  29. Gradually add milk and vanilla.

  30. Fold egg whites into peanut butter mixture, and carefully add in the peanut butter chips being careful not to over mix.

  31. Pour into pie shell and bake for 30-35 minutes. Serve warm or room temperature, and store leftover pie in the refridgerator.
