  4. 2 c Cooked Chicken; Cut Up

  6. 1 c Mayonnaise Or Salad Dressing

  7. 1/4 c Carrot; Finely Chopped

  8. 1/4 c Celery; Finely Chopped

  9. 1/4 c Fresh Cilantro;FinelySnipped

  10. 3 tb Orange Juice

  11. 1/2 ts Salt

  12. 1/2 ts Cinnamon; Ground

  13. 1/4 ts Pepper; Freshly Ground

  14. Lettuce Leaves

  15. 3 Oranges;

  16. 2 Avocados;

  1. * Finely chop the scallions or green onions including a few green tops.

  2. ** Oranges should be pared and sectioned, or can be unpared, cut into wedges.

  3. ** Avocados should be pared and cut into wedges.

  4. ~-- ~-- ~-- Sprinkle the scallions with the lime juice and 1/4 t salt; cover and refrigerate.

  5. Mix the remaining ingredients except the lettuce, oranges and avocados and refrigerate at least 1 hour.

  6. Spoon chicken mixture onto lettuce.

  7. Garnish with oranges and avocados; sprinkle with scallions.
