  1. 2 Young corn - kernels cut off

  2. 1/3 cup 78ml Sweet gherkin pickle juice

  3. 1/4 cup 23g / 0.8oz Minced sweet gherkin pickles

  4. 1/4 cup 15g / 1/2oz Minced red onion

  5. 1/4 cup 23g / 0.8oz Minced red bell pepper

  6. 3 tablespoons 45ml Cider vinegar

  7. 1/2 teaspoon 2 1/2ml Salt

  8. 1/4 teaspoon 1 1/3ml Red pepper flakes

  1. Put corn, pickle juice, pickles, onion, pepper, vinegar, salt and pepper flakes in 8-inch skillet over medium-high heat. Stir well. Simmer 2 minutes. (Can be made several days ahead and refrigerated.)

  2. To serve, mix well, drain off juices. Chill 1 hour before serving.

  3. This recipe yields 4 to 5 servings.
