  1. 1 chicken (about 3 pounds), cut into 8 pieces 2 teaspoons salt

  2. 1/2 teaspoon freshly ground black pepper

  3. 1/4 cup olive oil

  4. 1/2 cup chopped shallots

  5. 12 pitted prunes

  6. 3/4 cup finely chopped blanched almonds

  7. 1/2 cup water

  8. 1/4 teaspoon grated nutmeg

  9. 2 tablespoons chopped parsley

  1. Sprinkle chicken with salt and pepper. In large skillet, heat oil over medium-high heat. Add chicken and cook until brown on all sides, about 5 minutes. Remove chicken to 2 1/2 quart baking dish.

  2. Preheat oven to 350 degrees F. To skillet, add shallots and sautÈ about 10 minutes; add to chicken. Add prunes, almonds, water and nutmeg; cover with foil perforated with fork in several places. Bake in oven until chicken is fork tender, about 1 hour. Remove to serving platter and sprinkle with parsley.
