  1. Zucchini with Parmesan Cheese

  2. 1 yellow onion, diced

  3. 2 medium zucchini, sliced and quartered

  4. 1 tablespoon butter

  5. 1 tablespoon olive oil

  6. Salt and pepper

  7. Freshly grated parmesan cheese

  8. Cook the onions in butter and oil over medium heat until the onions

  9. begin to brown. Add the zucchini slices in batches, being careful

  10. not to overcrowd the pan. You want them to brown on both sides.

  11. Sprinkle with Parmesan cheese when cooked, and serve with more on

  12. top.
