  1. 1 cup 198g / 7oz Sugar

  2. 2 tablespoons 30ml Cornstarch

  3. 1/2 cup 118ml Lemon juice

  4. 1 Lemon - grated , rind of

  5. 1/2 cup 99g / 3 1/2oz Butter

  6. 2 tablespoons 30ml Brandy

  7. 1/4 teaspoon 1 1/3ml Nutmeg or cinnamon

  8. 1/2 cup 118ml Light rum

  9. 2 tablespoons 30ml Dark rum

  1. Blend the sugar and cornstarch in 1 cup of boiling water. Cook stirring constantly over medium heat until the mixture begins to thicken. Add remaining ingredients and cook for 2 minutes, stirring constantly.

  2. Serve hot over mince pie, pound cake, or pudding.

  3. Makes 3 cups of sauce.
