  1. 1 onion , chopped

  2. 1 garlic clove , minced

  3. 1 tablespoon oil

  4. 2 (6 1/2 ounce) jars marinated artichokes , drained and chopped

  5. 6 eggs , beaten

  6. 1 cup cheddar cheese , shredded

  7. 1 cup mozzarella cheese , shredded

  8. 1 cup parmesan cheese , grated

  9. 1/2 teaspoon italian seasoning

  10. 1/4 cup fresh parsley , chopped

  11. 1/4 teaspoon pepper

  12. 1/8 teaspoon Worcestershire sauce

  13. 1/8 teaspoon hot pepper sauce

  14. 1/4 cup Italian seasoned breadcrumbs

  15. additional fresh parsley , chopped

  1. In a skillet over medium heat, saute onion and garlic in oil until tender; drain and set aside. Combine artichokes, eggs, cheeses, seasonings, and sauces in a large bowl; mix well. Stir in onion mixture and bread crumbs.

  2. Fill greased mini muffin cups 2/3 full. Bake at 325 degrees for 15 to 20 minutes, until firm and golden.

  3. Serve warm, sprinkled with additional parsley, if desired.
