  2. 1 medium cucumber, sliced

  3. 1 cup crumbled feta cheese

  4. 1 cup cherry tomatoes, quartered

  5. 1 small red onion, thinly sliced

  6. 1/2 cup julienned roasted sweet red peppers

  7. 1/2 cup pitted Greek olives, halved

  8. DRESSING:

  9. 2/3 cup olive oil

  10. 1/4 cup red wine vinegar

  11. 1 garlic clove, minced

  12. 1 teaspoon Italian seasoning

  13. 1/4 teaspoon salt

  14. 1/4 teaspoon pepper
