  1. 2 tb Oil

  2. 1 md Onion, chopped

  3. 3 ea Celery stalks, diced

  4. 3 lg Potatoes, diced

  5. 4 c Stock

  6. 1 ea Bay leaf

  7. Salt and pepper

Instructions Jump to Ingredients ↑

  1. Heat oil in pot and saute onion till translucent. A celery and saute for a couple more minutes. Add potatoes and saute, covered for 5 minutes. Add the rest of the ingredients and cook till potatoes are tender. Remove bay leaf. Let cool for a few minutes, then puree. Reheat gently but do not let boil.
