  1. 2 Lebanese cucumber roughly peeled deseeded and finely sliced

  2. 2 tsp table salt

  3. cup rice wine vinegar

  4. 2 tsp caster sugar

  5. 2 tsp finely chopped dill

  6. ground black pepper

  7. 6 slices white bread toasted

  8. 250 - 300g tub crme fraiche

  9. 12-15 slices smoked salmon

  10. Salmon roe to garnish

  1. Place cucumber in shallow dish: sprinkle with salt. Stand 20 - 30 min.

  2. Spread crme fraiche on toast then layer with slices of salmon.

  3. Rinse salt from cucumber in water and squeeze dry.

  4. Place cucumber in bowl and combine with rice wine vinegar sugar, dill and pepper.

  5. Cut salmon toast to desired shapes using a sharp knife or biscuit cutter.

  6. Arrange a few pieces of cucumber on top of each salmon toast then top with salmon roe.

  7. Serve immediately on gorgeous platter.
