  1. 4 Soft-shell crabs - cleaned

  2. 1 tablespoon 15ml Olive oil

  3. Salt - to taste

  4. Freshly ground black pepper - to taste

  5. 4 Sandwich rolls

  6. 1/4 cup 59ml Green Chile Aioli - seeNote

  7. Mixed greens

  8. Tomato slices

  1. * Note: See the "Green Chile Aioli" recipe which is included in this collection.

  2. Prepare a wood or charcoal grill and allow it to burn down to the embers.

  3. Brush crabs lightly with olive oil and season to taste with salt and pepper. Grill for 2 1/2 minutes on each side.

  4. For each sandwich, place crab on one half of the roll, top with mixed greens, tomato slices and Green Chile Aioli. Top with the remaining roll halves.

  5. This recipe yields 4 sandwiches.
