  1. Broil one eggplant in the skin, so it is blackened and soft.

  2. Put it in a paper bag to steam, and infuse with the smokey flavor for about 1/2 hour or longer.

  3. In food processor throw:

  4. 2 cloves of garlic

  5. 3 TBS of chopped parsley

  6. 1/2 tsp cumin

  7. 1/2 tsp coriander

  8. The Eggplant

  9. 3 TBS of Tahini (sesame butter) (more to taste)

  10. Blend it all up till smooth. You may want to add a little salt or lemon juice. You can serve it warm or chilled.
