  1. 1 lb. boneless, skinless chicken breast, cut into bite-sized cubes

  2. 1 1/2 c. broccoli florets , steamed until just tender

  3. 1 red bell pepper , thinly sliced

  4. 1/2 green bell pepper , thinly sliced

  5. 1 sweet yellow onion , thinly sliced

  6. 1/2 C. cashews , roughly chopped

  7. 2 green onions , thinly sliced

  8. 1/2 C. hoisin sauce (or enough to coat all of the dishes)

  9. 2 C. cooked rice

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Brown the chicken until cooked trough.

  3. Add the peppers and onions and saute until cooked to desired tenderness.

  4. Add broccoli and cashews and heat through.

  5. Add Hoisin sauce and mix thoroughly.

  6. Serve over cooked rice topped with sliced green onions.

  7. Note: To make this a lower-carb dish, steam some cauliflower and press through a ricer to make cauliflower "rice".
