  2. Greek-style Macaroni Pie

  7. 175 grams macaroni

  8. 4 tablespoons olive oil

  9. 1 onion -- finely chopped

  10. 2 cloves garlic -- crushed

  11. 2 ounces soya mince or Quorn -- optional

  12. 4 tomatoes -- chopped*

  13. 2 teaspoons dried oregano

  14. 1 teaspoon dried mint

  15. 1 teaspoon ground cinnamon

  16. 1/4 teaspoon ground nutmeg

  17. 125 grams feta cheese -- crumbled

  18. TOPPING:

  19. 50 grams butter or margarine

  20. 50 grams cornstarch

  21. 6 deciliters milk

  22. 175 grams feta cheese

  23. 2 eggs -- beaten

  24. 225 grams Greek yogurt

  25. salt and pepper -- to taste

  26. I omitted the tomatoes, without harm.

  27. Cook the macaroni according to the package instructions.

  28. Drain and set aside.

  29. Heat the oil in a frying pan and fry the onion and garlic till soft.

  30. Stir in the soya mince or Quorn (if using) and tomatoes, and fry

  31. for 2-3 minutes.

  32. Add the spices and herbs, and fry for a further minute.

  33. Remove from the heat and stir in the cheese and macaroni.

  34. Season to taste and transfer to a large square ovenproof dish.

  35. Preheat the oven to 400F/200C.

  36. To make the topping, melt the butter in a pan, stir in the flour and cook for 1 minute.

  37. Gradually add the milk, stirring contantly until the sauce begins to

  38. thicken.

  39. Remove from heat and stir in the cheese.

  40. Quickly add the beaten eggs and yogurt, mix thoroughtly, season,

  41. then pour over the macaroni mixture.

  42. Bake for 30 minute, then allow to cool for a few minutes.

  43. Cut into squares and serve with a green salad. - - - - - - - - - - - - - - - - - -
