  1. 225g (8 oz) jarred sliced beetroot, drained and diced

  2. 1 (400g) tin cut green beans, drained

  3. 1 large Granny Smith apple - peeled, cored and diced

  4. 1 teaspoon olive oil

  5. 2 tablespoons cider vinegar

  1. Combine all ingredients in a medium bowl and toss well. Chill for 1 hour before serving. Serve cold.
