  1. 1/3 cup olive oil

  2. 1 C Finely chopped onion

  3. 3/4 C chopped celery

  4. 1 C Chopped green pepper

  5. 1 C chopped carrots

  6. 1 tbsp Minced garlic

  7. 2 C sliced mushrooms

  8. 1 tbsp ground cumin

  9. 3/4 tsp dried basil

  10. 1-2 tbsp chilli powder

  11. 3/4 tsp Dried oregano

  12. 1 1/8 tsp salt

  13. 3/4 tsp pepper

  14. 1 - 28 oz can tomatoes with juice

  15. 3 cups cooked black beans or canned with liquid

  16. 3/4 tsp Tabasco

  17. 3 oz tomato paste

  18. 1/4 cup red wine

  19. 2 C water

  1. Heat oil, add onions, celery, green peppers, carrots, garlic, mushroom, cumin, basil, chili powder, oregano, salt and pepper, and saute for 2-3 minutes.

  2. Add tomatoes and juice, beans and liquid, Tobasco, tomato paste, wine, and water and bring to boil, stirring constantly.

  3. Reduce heat and simmer for 20 minutes or until carrots are tender.

  4. Serve with sour cream and tortilla chips.
