  1. 2 cups 474ml Uncooked shredded potatoes

  2. 1 cup 198g / 7oz Egg - beaten (large)

  3. 1/3 cup 48g / 1.7oz Chopped nuts

  4. (e.I. Walnuts, pinenuts, peanuts,

  5. Cashews, almonds etc.)

  6. 1 tablespoon 15ml Minced fresh parsley

  7. 1 teaspoon 5ml Soy sauce

  8. Oil - for pan-frying

  1. Combine all ingredients, except oil, in a medium bowl. Form into patties, about 1/2-inch thick by three inches in diameter. Fry in hot oil until lightly browned and just firm.

  2. Serves 2.
