  1. Low-Fat Pasta Salad

  2. 16 ounce package Penne or macaroni

  3. 1 medium head escarole

  4. 3 Tablespoons red wine vinegar

  5. 1 Tablespoon Dijon mustard

  6. 1/3 cup fat free mayonnaise

  7. 1 teaspoon ground pepper

  8. 6 ounce package extra lean ham

  9. 6 ounce can white chicken in water

  10. 6 ounces fat free Swiss Cheese

  11. In large nonstick saucepan, prepare pasta according to package

  12. directions, drain and set aside. Thinly slice escarole, discarding

  13. any tough ribs. In large bowl, combine vinegar, mustard. mayonnaise

  14. and pepper; mix well. Add remaining ingredients and mix well. Serve

  15. 1 hour. Makes
