  3. salt and freshly ground black pepper

  4. 9 Oz uncooked penne

  5. 13 Oz cooked turkey -- cut into thin strips

  6. 3 Tbsp fresh pesto sauce

  7. 4 Tbsp double cream

  8. To garnish:

  9. shaviongs of Parmesan cheese

  10. basil leaves

  1. Add 1 tbsp of the oil, 1/2 tsp salt and penne to a large pan of boilingwater and boil, uncovered, for about 10 mins, or according to packetinstructions.

  2. Meanwhile, heat the remaining oil in a large frying pan until hot, butnot smoking. add turkey and stir-fry for 1-2 mins. Then add the pestoand stir-fry for a further 2-3 min, until turkey is heated through.

  3. Drain pasta, add to turkey sauce and toss over a high heat, until evenlymixed. add cream, season to taste and toss again. Serve with theParmesan and basil leaves.
