  1. 1/3 c Margarine or butter

  2. Deveined

  3. Shrimp (in shells), cleaned

  4. 1 1/2 Pounds fresh or frozen mediu

  5. 2 c Chicken broth

  6. 1/4 c Shredded coconut

  7. ham, Chopped

  8. 1/4 Pound fully cooked smoked

  9. 1 md Tart apple, chopped

  10. 1 md Tomato, chopped

  11. 1/4 ts Pepper

  12. 1/4 ts Dry mustard

  13. 1/2 ts Ground ginger

  14. 2 ts Sugar

  15. 1/3 c All-purpose flour

  16. 1 Cl Garlic, chopped

  17. 1 sm Onion, coarsely chopped

  18. 1 1/2 ts Curry powder

  19. 4 c Hot cooked rice

  1. Heat margarine in 3-quart saucepan over medium heat.

  2. Cook curry powder, onion and garlic in margarine 2 minutes.

  3. Stir in flour, sugar, ginger, mustard, pepper, tomato, apple and ham.

  4. Cook 5 minutes, stirring occasional Stir in coconut and chicken broth.

  5. Heat to boiling; reduce heat.

  6. and simmer 1 hour, stirring occasionally.

  7. Rub mixture through sieve.

  8. Return liquid to saucepan.

  9. Heat to boiling; add shrimp.

  10. Heat again to boiling; reduce heat.

  11. Simmer uncovered about 3 minutes, stirring occasionally, just until shrimp are done.

  12. Serve with rice.

  13. SERVINGS; 420 CALORIES PER SERVING.
