  2. 1 (18 1/4 ounce) package yellow cake mix

  3. 1/4 teaspoon baking soda

  4. 2/3 cup dark rum

  5. 2/3 cup water

  6. 2 eggs

  7. 1 cup mashed bananas

  8. 1/3 cup chopped pecans

  1. Preheat oven temperature to 350 degrees.

  2. Prepare two nine-inch round cake pans with grease and flour.

  3. Combine baking soda, cake mix, water, rum, eggs, bananas and pecans (if desired).

  4. After thoroughly stirring ingredients, use an electric mixer on medium speed for approximately 3 minutes.

  5. Divide batter into the two cake pans.

  6. Place cake pans in preheated oven for approximately 25 to 30 minutes, or until toothpick inserted in the center of the cakes comes out clean.

  7. Once cakes are done baking, remove from the oven and let them cool to room temperature.

  8. To make the frosting, combine 1/3 cup butter or margarine with the powdered sugar. Mix thoroughly. Add 2 teaspoons of vanilla extract and 2 tablespoons of rum. Beat with electric mixer until smooth.

  9. Place icing on cake and enjoy. .
