  1. Pickled Black Eyed Peas

  2. Yield: 12 servings

  3. 1 lb dried black eyed peas

  4. 2 c Italian salad dressing

  5. 2 c green pepper, diced

  6. 1 1/2 c onion, diced

  7. 1/2 c jalapeno peppers, finely minced

  8. 2 oz pimiento, diced, drained

  9. 1 tb garlic, finely chopped

  10. salt to taste

  11. hot pepper sauce, to taste

  12. 1 c parsley, chopped, optional

  13. Soak peas overnight. Cook until just tender about 40 minutes. Do

  14. not over cook. Drain peas. In a large bowl, combine peas and salad dressing. Let peas cool. Add green pepper, onion, green onion,

  15. jalapenos, pimiento, garlic, salt, hot pepper sauce and parsley.

  16. Marinate overnight. Serve as a relish, on a bed of lettuce as a

  17. salad or can be sutffed in a tomato. Yield: 10-12 servings
