  1. Hearty Black-Eyed Pea Salad

  2. 3 15-ounce cans black-eyed peas, rinsed and drained

  3. 1/2 pound fully-cooked ham, diced

  4. 3 medium tomatoes, diced

  5. 1/2 cup chopped green onions

  6. 1 medium carrot, chopped

  7. 5 tablespoons olive or vegetable oil

  8. 3 tablespoons cider or red wine vinegar

  9. 1 tablespoon Dijon mustard

  10. 1 tablespoon lemon juice

  11. 2 cloves garlic, minced

  12. 1 tablespoon minced fresh basil or 1 teaspoon dried basil

  13. 1 teaspoon soy sauce

  14. 1/2 teaspoon dried oregano

  15. 1/2 teaspoon sugar

  16. 1/4 teaspoon Worcestershire sauce

  17. 1/4 teaspoon salt

  18. 1/8 teaspoon pepper

  19. 1/8 teaspoon hot pepper sauce

  20. In a large bowl, toss peas, ham, tomatoes, onions and carrot; set

  21. aside. Combine dressing ingredients in a jar with a tight-fitting

  22. lid; shake well. Pour over the salad and toss to coat. Cover and refrigerate for at least 1 hour.
