  1. 4 oz Fresh fish fillets

  2. 3/4 c Dried bread crumbs

  3. 2 tb Grated Parmesan cheese

  4. 2 tb Chopped fresh parsley

  5. 1 ts Paprika

  6. 2 ea Egg whites, lightly beaten

  7. 1. Rinse fish and pat dry 2. Blend bread crumbs with cheese, parsley

  8. 3. Dip fillets into beaten egg whites, then bread crumb mixture.

  9. 4. Place in a single layer on wax paper and place in freezer

  10. 1 hour.

  11. 5. Spray a large skillet with NO Stick cooking spray. Place skillet over medium high heat. Add fillets; cook carefully turning once, until coating is brown and fish turns from translucent to opaque.
