  2. 2 1/4 Unsweetened chocolate

  3. 1 Egg

  4. 6 tablespoons 90ml Evaporated milk

  5. 2 teaspoons 10ml Baking powder

  6. 1 teaspoon 5ml Vanilla

  7. 1 cup 198g / 7oz Sugar

  8. 1/2 cup 118ml Mashed potatoes

  9. 1/4 teaspoon 1 1/3ml Salt

  10. 1 1/4 cups 78g / 2.8oz Flour

  11. 1/2 cup 73g / 2.6oz Nuts - chopped

  1. Recipe Instructions Cream shortening. Add sugar, chocolate, which has been melted over hot water, and mashed potatoes. Beat thoroughly. Add egg yolk and milk. Sift flour, measure, and sift with baking powder and salt. Beat thoroughly. Add nuts and flavoring. Fold in stiffly beaten egg white. Pour into well-oiled layer cake pans. Bake in moderate oven (375F) 25-30 minutes.
