  6. 7 1/2 oz White chocolate;

  7. 1/4 pieces 8 oz Semi-sweet chocolate;

  8. -chopped into 1/4 pieces

  9. 3/4 c Heavy cream

  10. 5 tb Unsweetened cocoa

  11. EQUIPMENT: Cutting board, cook's knife, measuring cup,

  12. 2 stainless steel bowls,

  13. 1 1/2-quart

  14. saucepan, 2 whisks, baking sheet, parchment paper.

  15. Place the white and dark chocolates into separate

  16. stainless steel bowls. Heat the cream in a 1 1/2-quart

  17. saucepan over medium heat. Bring to a boil. Pour 1/4 c

  18. of boiling cream over the white chocolate and the

  19. remaining 1/2 c over the dark chocolate and allow to

  20. 4 to 5 minutes. Stir each with a separate

  21. whisk until smooth, and allow to cool for 1 hour at

  22. room temperature. Refrigerate the two ganaches for 15

  23. minutes, stirring every 5 minutes.

  24. Line a baking sheet with parchment paper. Portion 36

  25. heaping teaspoons of dark chocolate into separate

  26. mounds onto the parchment paper. Top each teaspoon of

  27. dark chocolate with a level teaspoon of white

  28. chocolate.

  29. To fashion the truffles, roll each portion of

  30. chocolate in your palms in a gently circular motion,

  31. using just enough pressure to form smooth rounds. Roll

  32. the rounds of chocolate in cocoa until completely

  33. covered. --
