  1. 9 tablespoons 135ml Beets (9 or 10 medium, 2 bunches) (medium)

  2. 2 teaspoons 10ml Olive or vegetable oil

  3. 1/2 cup 118ml Reduced-sodium chicken broth

  4. 2 teaspoons 10ml Grated orange peel

  5. 2/3 cup 157ml Orange juice

  6. 1/4 cup 40g / 1.4oz Packed brown sugar

  7. 6 tablespoons 90ml Chopped fresh parsley

  8. 1 teaspoon 5ml Chopped crystallized ginger

  9. 1/2 teaspoon 2 1/2ml Ground ginger

  1. Heat oven to 400º. Cut beets into fourths. Place beets, oil and broth in ovenproof 3-quart saucepan. Cover and bake 30 to 45 minutes, stirring occasionally, until beets are tender. Remove from oven.

  2. Stir in orange peel, orange juice and brown sugar. Cook over medium-high heat 5 to 8 minutes, stirring frequently, until sauce is reduced and beets are coated with glaze. Stir in parsley and ginger.
