    1. 1 lb Tomatoes, green

    2. 1 Pepper, red for contrast

    3. 1/2 c Cream

    4. Butter or oil for frying

    5. Salt and pepper to taste

    1. Core and cut green tomatoes.

    2. The skin may be a problem depending upon the age of the tomatoes;if necessary, peel the skins.

    3. Melt butter or shortening;fry the tomatoes until they become translucient but not mushy.

    4. Season and add the pepper for colour; add the cream being careful that it does not curdle.
