  1. 1 tbsp. canola oil

  2. 1359 g boneless beef brisket

  3. 1/2 cup chopped onion

  4. 1/2 cup water

  5. 3 cups carrots sliced

  6. 1/4 inch thick

  7. 1/4 cup packed brown sugar

  8. 1 tbsp. fresh lemon juice

  9. 1 tsp. salt

  10. 1/2 tsp. ground cinnamon

  11. 1/2 tsp. pepper

  1. Heat oil in a dutch oven until hot. Brown brisket on both sides and reserve. Pour off drippings. Add onions to pan and cook, stirring, 5 minutes or until tender. Add water. Add brisket to pan and bring to a boil. Cover and simmer 2 1/4 hours. Add carrots, brown sugar, lemon juice, salt, cinnamon and pepper. Cover and cook 30 to 45 minutes until brisket is very tender. Slice brisket and serve with carrots and sauce.
