  1. 1 Egg

  2. 1/2 cup 99g / 3 1/2oz Plus 3 tablespoons sugar

  3. 1/2 cup 118ml Milk

  4. 1 tablespoon 15ml Vegetable oil

  5. 1 tablespoon 15ml Orange juice

  6. 1/4 teaspoon 1 1/3ml Almond extract

  7. 1 cup 62g / 2 1/5oz All-purpose flour

  8. 2 teaspoons 10ml Baking powder

  9. 1/2 teaspoon 2 1/2ml Salt

  10. 8 oz 227g Fresh cranberries (2 cups)

  11. 2 tablespoons 30ml Margarine or butter

  1. Preheat oven to 375 degrees F.

  2. Beat egg; add cup sugar, milk, oil, orange juice and almond extract;

  3. mix thoroughly.

  4. Combine 1 cup flour, baking powder and salt; add to egg mixture and mix. Pour into an 8-by-8-by-2-inch pan that has been sprayed with nonstick spray.

  5. Chop cranberries in a blender or food processor; spoon over batter.

  6. Mix cup flour with 3 tablespoons sugar and cut in 2 tablespoons margarine. Sprinkle over cranberries.

  7. Bake at 375 F for 25 to 30 minutes. Serve warm.

  8. Makes 16 servings (2-inch squares).
