  1. 1 organic chipotle pepper , remove seeds

  2. 1 1/4 cup(s) organic light cream

  3. 3 medium organic sweet potatoes , very thinly sliced Kosher salt

  1. Preheat oven to 350 degrees F. Puree together the chipotle pepper and the cream until smooth. Place a small amount of the cream mixture in the bottom of a 1 1/2-quart baking dish. Place a thin layer of overlapping potato slices over that. Drizzle the potatoes with a tablespoon of the chipotle cream and a sprinkle of salt. Repeat using all the potatoes and cream, sprinkling each layer with a pinch of salt. Bake for 1 hour, or until the potatoes feel tender when pierced with a sharp knife.
