  1. 4 chicken breast halves without skin -- bone-in

  2. 4 russet potatoes -- unpeeled,

  3. 1" cubes

  4. 1 green bell pepper --

  5. 1 1/2" cubes

  6. 1 onion -- cut in

  7. 8 wedges

  8. 2 tablespoons margarine -- melted

  9. 1/4 cup parmesan cheese -- grated

  10. 1 teaspoon garlic powder

  11. 1 teaspoon paprika

  1. Preparation : 1. Heat oven to 400 degrees F. Spray 15x10x1-inch baking pan with nonstick cooking spray. Place 1 chicken breast half in each corner of sprayed pan. Place potatoes, bell pepper and onion in center of pan. Pour melted margarine over chicken and vegetables; sprinkle evenly with cheese, garlic powder, and paprika.

  2. Bake at 400 degrees F. for 30-35 minutes, or until chicken is fork-tender and juices run clear, stirring vegetables once halfway through cooking. NOTE: Janet R used boneless skinless chicken breasts and cooked them frozen to allow ample time for the potatoes to cook.
