  1. 1/2 tsp. cinnamon

  2. 3 tb Butter

  3. 4 tb Flour

  4. 1 1/2 c Milk

  5. 6 Egg yolks

  6. 8 Egg whites

  7. 1 pn Salt

  8. 1/8 ts Cream of tartar

  9. 1/2 c Sugar

  10. 1 c Pitted black cherries, fresh

  11. -or canned 2 tb Cherry liqueur (opt)

  1. DIRECTIONS: Preheat oven to 400-F.

  2. Melt the butter and add the flour.

  3. Add the milk gradually, stirring with a wire whisk to make a thick smooth sauce.

  4. Remove from the heat and add the egg yolks one at a time.

  5. Add the sugar, cinnamon and cherry liqueur (opt).

  6. Fold in the cherries cut into pieces.

  7. Beat the egg whites, with a pinch of salt and the cream of tartar, until stiff.

  8. Fold the cherry sauce into the beaten egg whites.

  9. Spoon into a prepared 6 cup souffle dish.

  10. Place the souffle in the oven and immediately reduce the heat to 375-F.

  11. Bake for 25 minutes.

  12. May be served with a chocolate sauce.
