  1. 2 whole Maine lobsters -- cooked

  2. 2 medium onions

  3. 1 pint milk

  4. 1 pint sweet light cream

  5. 1 celery stalk

  6. 1 bay leaf

  7. 1 tablespoon whole cloves

  8. 2 tablespoons sherry

  9. salt -- to taste

  10. black pepper -- to taste

  11. nutmeg -- to taste

  12. 1 egg yolk -- beaten

  13. 2 tablespoons butter

  14. 45 minutes. Strain through sieve into a clean soup ketle. Add lobster and sherry. Season to taste with salt, pepper, cayenne, and nutmeg. Simmer over very low heat until lobster is heated through. Beat

  15. 1/2 cup of the soup into beaten egg yolk. Pour egg mixture gradually into remaining soup mixture and heat

  16. 1-2 minutes longer. Pour into soup bowls and top each with

  17. 1/2 tablespoon butter.

  18. Serving Ideas : Serve with oyster crackers.

  19. NOTES : Use 1 1/2 pound lobsters.
