  1. 2 cups 474ml Large green Sicilian olives

  2. 1 Lemon - zest cut in strips

  3. 1 Handful fresh rosemary sprigs - needles stripped

  4. 1 Handful fresh thyme sprigs - leaves stripped

  5. From the stems

  6. 1 Handful fresh basil - hand-torn

  7. Kosher salt - to taste

  8. Freshly-ground black pepper - to taste

  9. Extra-virgin olive oil

  1. Put the olives in a shallow bowl, add the lemon strips and herbs; season with salt and pepper. Toss gently with your hands to combine. Cover with olive oil and let marinate for 30 to 45 minutes.

  2. Serve as a noshing platter alongside the "Fried Zucchini Flowers" (see recipe).

  3. This recipe yields 4 to 6 servings.
