  1. 1/4 c Butter, softened 

  2. 2 ts Cinnamon

  3. 3 lg Eggs 

  4. 1/2 c Raisins; optional

  5. 1/2 c Unsweetened apple juice 

  6. 1 Fresh apple, washed, peeled

  7. 1/2 c Unsweetened applesauce Cored and thinly sliced

  8. 2 c Unbleached white flour Topping:

  9. 2 ts Baking powder Unsweetened applesauce

  10. 1 ts Baking soda Warmed over medium heat..

  1. In a medium sized bowl beat together until creamy - butter, eggs, apple juice, and applesauce. Add flour, baking powder, baking soda, and cinnamon. Beat well. Stir in raisins if desired. Oil and flour an 8 square baking pan. Line bottom of pan, 1 layer deep, with thinly sliced apple. Spoon batter over apples and smooth top. Bake at 350 degrees for 25 to 30 minutes or until well-browned. Invert onto a wire rack to cool, apple side up.
