  3. 1 tsp chili powder

  4. 2 large carrots, sliced into rounds

  5. 6 tbsp butter, melted

  6. 3/4 cup/150 g raw sugar

  7. 1 1/4 cups/180 g whole-wheat/whole meal flour

  8. 1 tsp baking powder

  9. 1/8 tsp salt

  10. 2/3 cup/

  11. golden raisins/sultanas

  12. 4 tbsp milk

  1. Method :

  2. Preheat the oven to 350°F/180°C/gas 4.

  3. Butter an 8 1/2 x 4 1/2-inch (21x11-cm) loaf pan. Line with foil, letting the edges overhang. Butter the foil.

  4. Place the eggs, baking soda, chili powder, and carrots in a blender and process until the carrots are finely chopped.

  5. Add the butter and sugar and pulse until smooth.

  6. Transfer to a large bowl and mix in the whole-wheat flour, baking powder, salt, raisins, and milk.

  7. Spoon the batter into the mold.

  8. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

  9. Cool the loaf on a rack for 10 minutes. Using the foil as a lifter, remove the loaf from the pan.

  10. Carefully remove the foil.

  11. Cool the loaf completely on a rack.
